In 2008, I was researching in my parents' restaurant kitchen for a recipe that I'd never tasted but wanted desperately to try. It happened to be an encyclopedia of Chinese and Thai recipes, called Mandarin Kitchen.
Suddenly, the wealth of delicious food I was missing in America was at my fingertips. I devoured the tome, but, unlike traditional cookbooks, it was entirely about regional foods and how to cook them.
Not surprisingly, there was no such chapter for sushi, a cuisine I loved, or for this column. That was when I decided to create one.
